Ingredients
3 tbsp tapioca
sesame seeds
For the filling
100g shiitake mushrooms , 50 g tomatoes, 1 avocado, ½ lime
Instructions
Cut the shiitake into small cubes and fry them, then add the tomatoes in small cubes.
After that set the pan aside and let cool.
Once the tapioca is toasted, top the tapioca with avocados (mash like guacamole) 2cm from the edge, followed by the fried shiitake. Carefully roll up the tapioca tightly with your fingertips and then place in the fridge for 30 minutes
Serve the tapioca sushi with ginger or wasabi paste.
